Dough hydration refers to the amount of water relative to flour in a dough, expressed as a percentage. It's one of the most important factors determining dough properties.
Hydration Percentage tells you how much water is in your dough relative to the flour. For example, 65% hydration means 65g of water for every 100g of flour.
Water-to-Flour Ratio shows the ratio between water and flour in its simplest form. This is particularly useful for baker's percentages calculations.
